Lately I have done a cheese making course and Dexter milk is so good for making cheese especially for all those cheeses goats milk is best for. It is because Dexter milk has small fat globules like goats milk. I love making fresh Ricotta, so easy!! but so smooth and tasty. I am hoping to follow up with Fetta ,Mozarrella ,Halloumi, Brie, and maybe the blue cheeses. Must say Brie is my favourite but I also hope to make some Cheddar and Remano once I have honed my skills. I got carried away and did a sausage making course too so maybe some Salami and Chirizo to go with the cheese too?
At the moment we are waiting for our only red cow to calve. She is shortleg and polled mated to our polled red longleg bull. We are taking bets on what we will get. We would like a polled red girl but that comes out at a 2 in 16 chance.(one shortleg and one long).The only thing we do know is that it should be red. We have decided if it is a bull calf we will sell her and the calf as we won't be able to use him, so if you are in the market for a red bull this could be a possibility for you. Meanwhile we still have a couple of polled young longleg black bulls fror sale as well.
